Bread recipe – Wendy

450g bread flour ( I usually use roughly half white half wholemeal)
1 table spoon sugar
2 teaspoons dried yeast
1 teaspoon salt
1 table spoon oil (olive or sunflower)
330-350mls warm water
Optional- Handful sunflower seeds or pumpkin seeds or anything really – I sometimes add oats or dried quinoa or sesseme or poppy seeds etc
Put all dry ingredients in a bowl, mix well. Add water and oil mix well to a sticky mixture. Cover and leave in a warm place for 2 hours until doubled in size.
Heat a large cast iron pot in oven at 250 degrees C for at least half an hour. Meanwhile tip sticky mixture onto a well floured board. Fold edges over and in on itself towards the middle of the dough and then turn dough over, (it’s very sticky so plenty of flour) shape to a round and place in a bowl on a piece of greaseproof paper. Cover and leave in a warm place to rise again (approx half hour whilst your pot is heating up) turn oven down to 225
Place dough on paper in hot pot, put lid on, put in oven for 30 mins covered. Remove lid after half hour and cook uncovered for 5 mins.
